With a similar motive, Hyatt Regency Gurgaon recently launched SHIN'YA, an exquisite Japanese eatery and bar that promises to transform the culinary landscape of Delhi NCR. Named after the Japanese word for 'midnight,' SHIN'YA, with a seating capacity of 46, makes for an ideal choice for intimate family dinners, small gatherings, or a relaxed night out with friends. Inspired by the laid-back izakaya culture of Japan, SHIN'YA offers a unique blend of traditional and modern Japanese cuisine in a relaxed, social setting. We called it a weekend in the company of Chef Adi Melaz, who has designed the menu along with Executive chef Yatendra Rawat of the hotel. According to Chef Adi, the idea behind the menu is to offer authentic Japanese dishes tailored to the Indian palate and made with freshly sourced ingredients from around the world. The signature dishes of the menu are Yakitori, Grilled Meats and Fish, Karaage, Edamame, Pickled Vegetables, Sashimi, Sushi, and Robata. And our 120 minutes meal was duly complemented by refreshing cocktails by mixologist Shashwat Prasad, who has curated an impressive beverage menu featuring Japanese whiskey, sake, premium wines, and more. The best picks from the bar menu are Matcha Fennel Fizz, a cocktail made with gin, fresh fennel matcha tea, and egg white. And the other one that complemented the desse Goma Dofu, (a sesame-based pudding that also uses azuki beans an kuromitsu brown sugar syrup), was Miso Caramel-tini, a vodka based drink made along with miso paste, salted caramel, and fresh brewed espresso. Amd of you are new to the cuisine, we suggest you to try Chef Adi's Recommendation from the menu that features dishes like Wafu Asparagus, Avocado Carpaccio, Salmon Crudo, Buta kakuni and more and trust us, you will be back again for a weekend staycation with the hotel to enjoy another meal and other offerings that make the hotel a relaxing space.

Yi Jing, Sheraton New Delhi: The classic Chinese restaurant at Sheraton New Delhi recently announced the launch of its new menu, which is designed by a brigade of culinary designers and master chefs with a motive to bring a contemporary reinterpretation of time-tested recipes and popular preparations. Inspired by traditional techniques, every recipe here is curated with the choicest ingredients and reimagined for the modern-day connoisseurs. During the tasting session we tried the star dishes including Spicy Carrot Wasabi Dumplings, Hunan Style Chili Tofu, Sake & Edamame Dumplings, Cantonese Style Lotus Stem, and for non-vegetarians, there was the classic Sichuan Style Crispy Prawns. For the mains, we had stir-fried Chinese Greens and Shanghai Style Stir-Fried Vegetables, along with Yi Jing Vegetable Fried Rice and Wok Tossed Noodles with Vegetables and Microgreens. All this was seamlessly blended with custom-made cocktails, that helped accentuate the unravelling of classified gourmet, traversing the provinces of China with a transcendental modern uptake.
