Chef Anthony MandriotaChef Anthony MandriotaWow, times have sure changed since I wrote this story in February about the precarious availability of talented culinary workers in the then-white-hot restaurant market. You can pretty much throw that analysis out the window until we somehow put this pandemic behind us and figure out which restaurants survived the maelstrom, how many workers are needed and what talent pool remains in town. It’s pretty much a crapshoot at this point.

However, no matter where we find ourselves in a post-vaccine Nashville, I imagine there will still be a need for more qualified kitchen workers, so it’s good news to hear about a bold new educational initiative recently announced by Nossi College of Art. Nossi plans to launch a new culinary arts associate degree program with classes starting up in the fall of 2021.

The two-year program will be led by ACF-certified chef Anthony Mandriota, a 40-year industry veteran with bachelor’s and master’s degrees in hospitality management from Florida International University and teaching experience at various colleges, including the International Culinary School at The Art Institute of Fort Lauderdale and the International Culinary School at the Art Institute of Tennessee.

The curriculum will include a combination of in-kitchen classes taught by instructors from the industry as well as classes in leadership and business practices. The culinary arts degree program and curriculum will be shaped by Nossi staff with input from an advisory board of professional chefs and hospitality managers from Middle Tennessee who will strive to ensure that the curriculum is current and fills the specific demands of the restaurant and hotel industries.

“Nashville has become a food town, and until now, there hasn’t been a program of this caliber that provides the level of training and experience needed to develop local, professional chefs to run kitchens and restaurants,” says Cyrus Vatandoost, executive vice president at Nossi College of Art, in a press release. “We’re excited to have the experience, talents and leadership of chef Mandriota as we prepare students to be technically strong and develop the creative confidence to be successful in the culinary arts.”

The college's website quotes Mandroita: “Despite the events of 2020, we know people will always enjoy eating out, and restaurants and hotels will come back in a position of strength. Our comprehensive curriculum will give students a balanced and complete culinary experience unmatched by other programs in the Southeast and prepare them for an array of incredible career opportunities across the hospitality industry.”

More trained workers is never a bad thing, and applications to join the program next year are already open. Prospective students can learn more about the program and arrange a tour via the school’s website.
