Nigella Lawson's Mexican-inspired scrambled eggs are quick to make, tasty, and healthy.

Adding ingredients such as tomato, spring onion and green chilli, the breakfast recipe is full of healthy antioxidants and nutrients.

"This is not only the best way to start the day, but the best way to end it, too," said Nigella Lawson.

"You can make it even more of a meal by serving some refried beans alongside... they're so good that there is always a reason to eat them."

So, no matter what time of day it is for you, here's how to make Nigella Lawson's Mexican-inspired scrambled eggs.

Mexican-inspired scrambled egg recipe

Serves: two

Ingredients:

  • Two tablespoons vegetable oil
  • Two soft corn tortillas
  • One tomato (deseeded and roughly chopped)
  • One spring onion (roughly chopped)
  • One green chilli (deseeded and chopped)
  • Four large eggs (beaten)
  • A quarter teaspoon Maldon salt (or pinch table salt)

Method

1. Heat the vegetable oil in a heavy-based frying pan.

2. Roll up the corn tortillas in a sausage shape and then snip them into strips with a pair of scissors straight into the hot oil.

3. Fry the tortilla strips for a few minutes until crisp and golden, and then remove to a bowl.

4. Add the chopped tomato and spring onion to the hot oily pan along with the chopped chilli, turning everything about for a minute or so with a wooden spoon.

5. Put the corn tortilla strips back in the pan, and add the beaten eggs and salt. Using the same spoon, move everything about the pan as you do when scrambling eggs.

6. Once the eggs are setting, remove the pan from the heat, and continue stirring the eggs until they are done to your liking.

Health benefits

Nutritionist Nicola Shubrook said tomatoes could have the ability to protect the heart, eyes, and skin against disease.

Tomatoes contain a compound called lycopene that has the potential to reduce the risk of cardiovascular disease.

Shubrook told BBC Good Food that the carotenoids in tomatoes might help to prevent UV sun damage.

Not only that, tomatoes have been said to help alleviate menopausual symptoms in some women.
