The pancakes we know and love have taken a scrambled twist as of late. A recent TikTok showing a woman cooking pancake batter like scrambled eggs is dividing social media. Some are amazed by the technique as it creates bite-sized pieces of pancake without any cutting, while others are turned off by it. I, for one, love a round and fluffy stack of flapjacks — but I couldn’t miss the opportunity to try this hack and weigh in on it. Read on for more on this unique breakfast trend and my taste test!
Why scrambled pancakes are causing a stir online
From pancake tacos to pancake cereal, flapjacks have seen their fair share of culinary makeovers. However, TikToker @ArchivedChef showcased a completely different approach in June by stirring the batter while it cooks — creating scrambled pieces of pancake. “It’s so much easier this way. You don’t have to worry about getting the perfect circle,” she says in the video. Watch below as she demonstrates the hack and gives her honest reaction after trying the pancakes.
As you can imagine, the flurry of comments ranged from calling it “a crime” to saying it’s “kinda genius.” While these pancakes don’t resemble the classic round stack, making them into bite-sized pieces isn’t an entirely new concept. An Austrian dessert called Kaiserschmarrn takes a similar route by cooking pancakes and tearing them into small chunks before serving. This offers a taste of the pancake’s crispy edges and soft interior in each bite. Plus, it allows you to dip the pieces into fruit compote or other sauces without hassle.
With scrambled pancakes being a hot topic, I decided to make them and see if they’re actually delicious.
How to make scrambled pancakes
For my batch of scrambled pancakes, I used Sweet Laurel’s Pancake Mix and added ingredients that were listed on the box. But, you can use your favorite pancake mix and follow the instructions on the package for making the batter.
Scrambled Pancakes
Ingredients:
- ½ box of pancake mix
- 1 egg
- ¼ cup milk
- ¼ cup water
- Oil or cooking spray, for greasing
- Toppings of your choice
Directions:
- Yield: 2 to 3 servings
- In measuring cup or small bowl, combine egg, milk and water. Pour pancake mix into medium bowl and add wet mixture. Stir until just combined. (Note: Avoid over-mixing as it can produce dense and chewy pancakes.)
- Heat skillet or griddle over medium heat. Grease surface with oil or cooking spray.
- Place generous spoonful of pancake batter onto surface and allow around 30 seconds before scrambling. Continue stirring frequently to make small scrambles. Cook scrambled pancakes until golden brown and no longer liquidy.
- Serve hot with toppings and enjoy!
My taste test
After plating the pancake pieces, I topped them with pats of Churn Foods’ Maple and Cinnamon Butter and a drizzle of maple syrup. Based on the rustic appearance, I was expecting these pancakes to be not as fluffy or soft as the regular kind. Yet, I was met with tender nuggets of pancake that absorbed the sweet toppings. Creating pancake scrambles also made it easy to serve and enjoy each bite.
This trick does take the pressure off of forming and flipping perfectly round pancakes. Though, I don’t think it’ll become my go-to method for making pancakes. The advantage with scrambled pancakes is that they’re quicker to prepare than a normal stack, however, they aren’t significantly tastier. So, I’ll keep this in my back pocket for when I need a speedy breakfast that satisfies my sweet tooth as well.
